INGREDIENTS (serves 4)

4 large beetroots, cooked and cubed

500g roasted & diced butternut squash or pumpkin

75g walnuts (or favorite nuts)

2 tbsp pumpkin seeds

1 tbsp balsamic vinegar

2 tbsp olive oil

1 tsp mustard seeds or mustard

240g rocket

200g feta cubed

DIRECTIONS

Toast nuts & pumpkin seeds in a frying pan.  Whisk oil, vinegar and mustard.  Now mix pumpkin, rocket and beetroot in bowl, toss with dressing., crumble over the feta and sprinkle with seeds & chopped nuts.

Or present on a platter all the ingredients, and drizzle over the dressing.
