INGREDIENTS
1 large fennel bulb, chopped
A handful fresh dill, chopped
½ cucumber diced
1 green apple, diced
2 bunches spring onions, white only, sliced
200g fresh& cooked or frozen & thawed green peas
Dressing:
3 tablespoons parmesan cheese, grated
50g walnuts
2 garlic cloves
Handful basil leaves
Handful spinach leaves
Juice of 1 lemon
1 tablespoon wine vinegar
¼ cup olive oil
Pinch salt
DIRECTIONS
Mix vegetables in a bowl. Wizz the dressing ingredients in mini blender then combine altogether
